Is there any value watching the fight animations or just skip to end?
Can I auto skip-to-end?

I sometimes watch some of the longer fights, to better understand the dynamics, who goes first and last and how powerfull the different units are against others. But sitting through 500 bandits and bandits camps fights is not worth it. You don't gain anythign by watching anything exept some insight on hoe fights work.

You can even just right click on the battle icon on the map or the little card notification in the top right to dismiss it without having to open the battle animation.
The only time it's really worth watching is if either the outcome didn't go as you expected, or if you're experimenting with unit/army composition and want to check it's working as you intended.

You should generally just skip to the end. As a hotkey secret just press
Esc
as soon as the combat window comes up to dismiss it.
I tend to find them frustrating to watch especially when counter units are involved. I get it - the combat resolution AI is dumb and my cannons are firing repeatedly at crossbows while my calvary futilely pokes the city wall with a stick... skipping animations means I can try to remain ignorant of how bad unit counters work in this game right now.

To be fair, it's emulating something that's not a simple matter of autochess, so cannons hitting your crossbows might reflect something as abstract as "Their crossbows are slaughtering us right now so better to target those." It just looks like autochess on the output.
