Hardcore achievements won't give you much trouble either way.
Don't worry about combat or thieving in HC. Do everything else that would not kill you. Learn from normal mode what the common pitfalls leading to death are while slowly building up your HC char. Then when you're comfortable with not dying, actively start combat on your HC char which should have like dragon armor and other non-DLC end game gear ready.
Basically, I did a bunch of money gathering, a lot of fishing to have food and so on (basically prepared myself for combat) with my HC character while exploring stuff with the main one. That way by the time I went into dungeons with my hardcore character I already knew what to expect difficulty wise.
At the end of it it wasn't that bad, did the hardcore run first try and it didn't take too long. In hardcore if you're going for achievements all you need to do is max out combat skills (which you can do with super easy enemies to be safe if you're running 2 characters) and then beat all main dungeons. There's no need to complete 100% unless you want to. It sounds harder and more tedious in theory than it actually is.
Otoh I don't think strength blocks much craftable gear so I don't know how useful that actually is.
