Report a translation problem
Workers seem to be assigned a job when they join the town, probably only reassigning if their job is no longer available (building removed). You can prioritize a job for new population to fill by clicking on a resource button at the top of the screen.
This sounds like a stupid question, but do you actually have somewhere for the new people to work? You can see the capacity for each job under its resource icon, if they are all full (20/20, 5/5.....) then you'll need to build additional work buildings before your workers can be assigned to them. Also workers only get assigned when you tick the town, so if you've just made a load of buildings you'll need to advance a tick for the workers to move into them.

Wood is highlighted in Green and yet it's collecting zero resources.
They've over complicated this.
I promise you, regular games of this genre are far more complicated. If you don't like it, you dont have to play it!
