Quick question about idling combat.
As a rule of thumb, if your auto eat threshold is higher than the enemy's maximum hit you're always safe as long as you have food. right?

Yes. But note that some rare enemies have stun and I think one other thing that causes you to take more damage. Some late game one's reduces your DR and some have affliction that reduces your health so your auto eat threshold drops.
But as long as you take these into account, you won't die.

Can you eat while stunned?

Yes, even auto-eat, nothing can stop you from eating/auto-eating. It just increases your damage taken.
