Mining crystals is pretty good.

The other cheat code is the passive incoming you get from your village w/ max tax rate. You'll never have to grind again after that

Depends on how late in game you are in, also what mode do you play?
I would say Thieving is good for getting money. Also investing in Township can give you nice income.

I maxed out township using money from thieving. Taxes from township yield stable and high amount of gold. Since then, I have no need to earn gold anywhere else.

Minning pure crystals (85) with mining gloves and build town. Thats if you have DLCs. It may take 2-4 weeks to max out taxes from town, but once you do that, you wont care about money anymore.
