Choosing harder slayer tasks will often assign you slayer based requirement monsters, only if you have all the requirements to enter said area

Except if you're farming for a specific item it's best to complete tasks as they reward Slayer Coins in addition to the experience you'll get by fighting monsters.
You're free to get any new Slayer task for free, any high slayer tasks will cost slayer coins, you earn slayer coins by defeating monsters while assigned a slayer task, kill the designated monster to earn Slayer XP & Slayer Coins, if you kill any of the Slayer Monsters in any of the Slayer Areas while not having them assigned will earn you a little bit of Slayer Experience & you will NOT earn Slayer Coins unless you are assigned them
In the combat menu, there should be an area where you can select to request a slayer assignment, for me it's below the stats, but depending on your screen size and/or layout it may be located differently, from there if you click 'New Task', it will assign you to kill a designated Monster, the first one is always free, you can optionally keep switching the slayer task until your desired monster that you wish to fight is there, or you can kill what they give you
I'd recommend to NEVER extend a Slayer Task unless you know how Slayer works, as you can lose lots of Slayer Coins without being adequately compensated, the higher your Slayer Level, the more kills it has to potentially assign you of a Slayer Monster, eventually you'll learn what Monsters will net you a decent amount of Slayer Coins then you can start using the Slayer Coins at your leisure
Amount of Slayer Coins per Slayer Task Kill is given based on the amount of HP a Monster has
