For the larger trailers you need a pick-up truck, normal cars don't work. Otherwise it's just getting the right angle and backing up into the right position.

I was trying to use a semi-truck do those work?

I spent a whole in game day trying to figure this out too, still havent attached a trailer to a semi truck yet. I'll keep trying.

I ended up getting it after trying for a while, it seems like you gotta go slow and back straight into it

Yeah, it's very picky. I clear out any obstacles in front of it so I have plenty of room to maneuver, take it slow and back right into it, should make a sound and you're good to go

The kingpin is a pretty small target for the fifth wheel, but there is one trick that helps me. I move the camera to the front so it's easier to line up one side of the truck and trailer as much as possible. Then slowly back up until you hit the trailer, sometimes it doesn't connect so you might have to slowly pull forward to overlap the kingpin again. (not realistic, but it works.) It's also difficult to do if there are enemies nearby, they can knock you off course. It is possible to hook up the trailer from an angle, but incredibly difficult. 'T' will detach trailers if you change your mind.
For small vehicles, all you can do is square off and center the trailer.
