You do need to gut fish before freezing. I think its indefinately if frozen but I havent tested it.

you can only freeze gutted fish. As far as i know they last indefinitely

But you can stack fresh gutted fish right? So maybe its best not to occupy all slots at once as some fresh might slip through into the stacking?

I think the dialog box that pops up when you buy a big boat says fish must be gutted and stacked, and optionally frozen. I normally just gut and freeze, so I'm guessing that freezing the gutted fish includes stacking them. But I do also stack if I'm running out of time and still have a load of gutted fish to do something with, then when I get back to port I don't seem to have any problems selling all my fish for the same price (per species) no matter whether it's stacked, frozen, or just gutted.
