can I get away with crafting only one item

I am thinking of just specializing in bows

You will just hurt yourself this way slowing down your progress. Not worth.
1. Not many classes will buy bows (7 of 18)
2. Bows require much wood so u won't craft many at the time, while other resources will be full
3. What with champions/guild requests ?? You will buy overpriced items on market ?
4. Caprice event - u can't do much here either.

There is nothing wrong with pushing one specific type of item. It would fast track you to t12 items. However that one type of item would most likely use one main resource (wood for bows). You won't be able to maximize crafting with that strategy. You should find something that uses iron as a compliment.
