ATR Prop Brake
Can't disable the prop brake after it's turned on, even when hydraulics are on and cycled and light next to PROP BRK is highlighted as READY. I've tried searching for an answer online but nothing I've tried so far works. Is there a button or control I've missed or something else I need to do to fix it?

In my COLD & DARK Default it is already OFF and does not need even the guard moved therefore to switch it. If I do need it after a Flight I can easily move it. Are you moving the guard? Are you sure it is not OFF already ready to start Engines?
You might try the EFB Modes in case it has a stuck switch.

I always move the guard and am able to switch between the 2 modes, it's just that neither actually makes a difference to whether the prop brake is turned on or not. This only seems to be a problem after the prop brake is turned on and one of the engines are started. Strangely after trying a few methods, I could turn the prop brake off for one engine (the last engine to be started near the end of startup) but not the other despite there only being one switch.

You start ENGINE 2 first as on most Airliners. Only the odd few do the opposite e.g. Fokker F28. The ATR only needs BATTERIES and not GPU as that Engine uses HOTEL MODE to start the 2nd Engine. That is why ENGINE 2 needs the BRAKE.

ATR has been updated quite a while ago, including a changed prop brake behaviour. If you want to operate the prop brake now, you have to first press the button to feed hydraulic pressure to the system. The button to do that is in your center console, right next to the power lever for engine one's ground idle position, labelled HYD AUX PUMP. Press it, then you can turn off the the prop brake.

I've tried that but I already have hydraulics available for the prop brake without the need to cycle the hydraulic pump and it still won't let me.
