Can't Take off
Whenever I apply full throttle with my joystick I am able due to so until I hit v1. After I hit v1 the engine RPM suddenly decreases and I can't takeoff safely, I end up spinning out on the runway. This is most prevalent with the DC-3. Does anyone have any advice. When I start in the air there doesn't seem to be any issues.

Remove all ASSISTS. Else you may not have got the Engines fully Started by the sound of that. I don't like the DC3 myself as it is hard to manage.

The DC3 is a kitten (if kittens can be airborne), it's glorious to fly. However, a sudden decrease after full throttle is likely an Assist that got turned on. If not that, then check your controller curves and your assignments for conflicts.

As beautiful and detailed as the DC-3 is, engine management is simplified somewhat. All you really have to do is keep the needles in the green ranges and the plane will fly. That's what the gauges are for! If there's one that's dipping down out of range, then that's going to be a big clue.

I guess it's possible you've set the mixture wrong, but that's hard to do since there are auto-high and auto-low settings. Just move the red levers until they click. High click for takeoff and landing, low click for cruise.

Still, my guess is the same as our friend ★Macman★: an Assist got turned on.

Re-check controls just to be sure: Updates have been known to change them randomly.
Then check optimal aircraft settings for flight conditions.

Nothing to do with "V1", the sim has no idea what V1 is, or what it would be for various aircraft. Follow the above advice to begin.
