No, also because considering I paid some good money in order to buy the top edition of FS I would like the default thing to works, just as all default plane worked flawlessly in the past 25 years...
I did Restart Flight 5 times and it didn't fix it. I had to grab the knob to force it to stop

The top wish on the feedback snapshot as of 4/1/2021 is the FBW Community Mod and it says Approach - Started and Release - 2021. As for the default things working for the past 25 years? I beg to differ honestly and I've been in this hobby for a very long time myself. The stock 737-800 in FSX is so limited in it's functionally and it uses the default Garmin GPS 500. I have a MCP from CPflight and some of the functions won't even work with the stock 737-800.
I usually forget to set the desired altitude in the flight planner, lol.

Yep, I do my best to make the simulation as closest to the real thing as possible, I'm trying to isolate the problem tweaking with my yoke settings, pedal settings, anything taht could "generate" this erratic behaviour. So far no sucess, but still trying.
I've been seeing a number of these pop up recently, are you too using the stock A320neo or FBW A320neo? Given your first sentence I'm going to assume the latter, is this correct? If so try swapping to the branch you're not currently using.
