As far as taxi instructions go, you will typically land, be told to exit the runway, then be handed off to ground control who will give you taxi instructions. There can be variations on this theme depending on the size of the airport but ultimately you don't get taxi information until you have exited the runway.
Wind correction should be dive away (pitch down and opposite wind direction) from wind if behind you and level into the wind if in front of you - as in behind or in front of your wings.
When I did the test tonight, the taxi assistant did come up this time and show me where to exit the runway, but, I still had major control issues. This plane should use the rudder controls (I'm using an XBox Controller) to steer..even the on-screen prompts tell you this when taxiing. However, I had more success steering the plane with the ailerons (left stick) than with the rudder. The plane behaves as if the rudder is fully depressed to make a hard left. I was able to taxi 70% of where I was trying to go, and then it became impossible to counter the hard left that the plane was trying to take.
I don't believe this is any type of controller issue. The plane flys just fine in the air. It's only once I land and try to taxi that the plane seems to be under some other type of control which would just take the plane randomly driving across runways, through grass instead of taxiways, etc.
Rudder must be used. In the C172 rudder is also tied to the nosehweel and it steers just a little bit left or right with the rudder to assist you.
It is likely you have auto coordination turned on. I can 100% verify that without auto coordination you cannot turn a 172 without rudder while on the ground.
