Not trying to start an Intel vs AMD vs Nvidia war or anything.... But if you are looking to build a PC to replace your potato (as i did) wanted to share my build details and notes. Maybe it might save you some time or money..

RESULTS:
MSFS2020 FPS 45-60 @ 2560x1440 (depends on location and cockpit), no stutters very smooth, average cpu %30-40, rock solid no crashes to desktop (just weird dev bugs). Side note DCS is great too.
MSFS Settings: Mix of High and Medium settings. Really wanted smooth, could probably tweak it up a bit. Majority of settings are high.

MEMORY: 2 x CORSAIR Vengeance LPX 16GB (2 x 8GB) 288-Pin DDR4 SDRAM DDR4 3200 (PC4 25600) - Total: 32GB
STORAGE: 2 x Western Digital Blue SN550 NVMe M.2 2280 1TB PCI-Express 3.0 x4 3D NAND Internal Solid State Drive (SSD) WDS100T2B0C- Total: 2TB SSD
VIDEO: ZOTAC GAMING GeForce RTX 2070 SUPER Twin Fan 8GB GDDR6 (seems decent, just trying to find any vendor in stock)
OS: Windows 10 Pro 64-bit

Build Notes: You will need to mount the CPU cooler in the front because of clearence on the top with the large heat sink on the motherboard. Moved the front supplied fans to the top in a exhaust setup, and the radiator in the front. Also flipped the fans on the radiator to suck in air from outside. To do this you will need to remove the lower disk drive cabinet. I was torn on this, but saw it as a sign to use just M.2 and SSD's. Removing the rear fan (temporarily) helps with installing the motherboard. Nothing else is needed except some basic tools, everything comes with necessary screws and components. After installing Windows 10 (2004) install all the latest drivers from MSI and video. Also upgrade BIOS if necessary.

I've been able to modestly OC the CPU to 4.8-5GHz and the video a little bit. More concerned on stability. Imagine this will last me 5-7 years, with a GPU upgrade some where in the middle.

Anyway, if you were thinking about building from components it can be daunting.. i hope this is useful if you are in the same boat... (if not please ignore)

Except to 2070. It’s good and I understand why because of crazy prices of 1080s and 2080s.

I use to buy 70 series too back in day. I find you upgrade more though.

But again the 80s are insane.

Yeah, I was torn on the 2070 Super but as you said the prices are CRAZY and thats if you can even find something in stock. I'm happy with the performance of the 2070S for $499-530. I see me using it for 2-3 years then upgrading. The CPU should last me a while.
10700k is a good cpu. But there are deeper problems with MSFS. Stuff we have to wait to get sorted. All cpus should run it fine. And lowering settings should give more fps. Its a mess.

I agree with that as well, there is a LOT of room for optimization with MSFS. It wasn't my only reason to upgrade. My last system was 7 years old and on its second GPU. Just an excuse, but if you have a newer system I would wait for them to optimize things.. But I agree, I don't see why some areas have such bad FPS (like the menu).

I personally really noticed it going from a 1080p monitor to 2K. DCS/MSFS and other games just really bogged down with the increase in pixels on my prior system.
