@Space Wolf Hudson
Just took a spin around Hohenzollern Castle, I've got 3D trees all around. My first suspect would be either a mod, faulty local cache or temporary issues with online data streaming being hte culprit.
Yeah could be, interesting.
No, nothing for scenery... except the germany, austria, switzerland world update, of course. The aircraft I'm flying is the (unofficial) A2A Piper Comanche, but that cannot cause issues like that, right?
I did download the update.
Ah ok so it is probably an issue on my end... Thats good to know. Maybe I clear my local data cache and see if that helps. As stated above, I have no scenery addons or mods, except for the official world update.

After the update, more stutters are experienced near or at the enhanced EDDF airport mod.

All trees are now proper 3D models.
Thanks all for the help!
I have all available DLCs installed for MSFS 2020 and all the latest MSFS 2020 updates for all worlds installed, as well. Other than a few "official" MSFS-marketplace-only purchases (for random airports, birds, etc), I'm not running any non-official mods, AFAIK.
Thanks!
Specs:

You can use rolling cache, but should delete it after every update as it can cause exactly the issues you see in this thread, performance degradation, or other bugs.
