I skip the hand controllers in VR and use my mouse instead to interact with the cockpit and menus. I've even tried Ultraleap hand tracking; mouse just works best for me. So yeah, you don't need hand controllers. As for no joystick, I haven't really tried M&K in MSFS.

My question would be why would you want to? VR gives you the most realistic realism sensation so to try flying with a keyboard instead of a flight stick just defeats the realism aspect. The VR is the more expensive part of your flight system so the cost of a flight stick should be negligible. Even a cheap flight stick will feel more realistic than pushing buttons on a keyboard to fly. I suppose you could fly with the keyboard while wearing your VR headset (there's nothing in the program that will prevent it). As long as you keep your hands over the proper keys to control your aircraft it can be done. It's just that there are so many keys on a keyboard that don't even scratch the surface for all of the controls and settings in your aircraft, it would be very frustrating to try and do it.

I used keyboard exclusively for about 35 years on all evolutions of MSFS. You can do it if you assign the keys as needed. MSFS2020 is no different. Kind of sketchy on takeoff and landing always.

A simple gamepad of some kind combined with mouse and Keyboard is probably preferable. I use an xbox gamepad.
