Report a translation problem
I generally start a flight in mid-air...I'm just a looky-loo that likes cruising at about 1500 feet. But it happens right off the bat. The game loads in, I press "ready to fly" and generally switch to "outside view" immediately. And there's my trim pushed all the way down, ready to point me straight up into the sky.
Maybe I could just press the altitude hold...didn't even think of that.
Not to be rude.. but that may be most of your problem.. check your settings.. see whats on or off to help or make life harder.. less power you float down.. more power you go up... trim is just umm to trim..:)
And I'm not sure why autopilot would be engaged right off the bat...does that happen? Even if it does, would that explain why my trim is pushed all the way down when I enter the game?
Here's the thing. If I just start the game and don't touch the joystick? My plane will immediately start doing loops. Autopilot or not, you'd think that shouldn't be the case.

The auto pilot will kill you if you try to control the plane while it’s engaged.
I know you said it’s not. Put it sounds like it is.
I don’t know about other planes but the TBM has a toggle (called auto trim). you can shut off for auto pilot adjusting trim. But does no good if your not flying TBM.
Go to your windows Run Dialogue and enter joy.cpl to check your stick and calibration.
On the runway, idling, before take off, after entering the plane clicking the Fly button, look at where your trim is set. Report back.
If you are starting the game with this issue..it sounds like your Co-Pilot is doing the flying .. or yes, a button is stuck..
But I don't really assume you meant what you wrote... name the planes that this does it in? and like someone already mentioned.. maybe a button is stuck or you have a conflict with some other controller connected... just for a test.. set assistance to EASY.. and see what happens.. then set to HARD..
on the "not meant to be rude" part.. I am so use to people hating suggestions they "ask for" and go off on the people that try to help.. just a thing..:)

Just an aside...I've had more crashes than ever lately, its been frustrating as hell...have probably spent more time loading the game than actually playing it. Just checked device manager for fun...I hadn't properly set my RAM stick a couple days back when I pulled it...have been operating on 8 gigs instead of 16 this whole time. I am NOT the sharpest tool here....and goddang I feel sorry for any poor bastard that has to play with only 8 gigs...holy hell.
hahaha.. good deal!! Enjoy the skies!! I already got 80 hrs in the game .. I know I am enjoying it..:)
