Different skis/boards
Aside from the better turning of carving versus twin-tips, and the latter's ability to go backwards, I've done some testing to try and validate some other things.

I tested on the Ski Jump at Dalarna where you can just get your guy to pick up speed and fly in a straight line with almost no input (don't even press A to jump, just let the ramp do it's thing).

As I expected the carving skis/boards gave a little more distance, but only a metre or so above the twin-tips (max was 38.4 metres), and the was no appreciable difference between the carving board and skis.

I then did it again using the Fly Further trick, and this time the carving skis seemed to go a bit better than the board, but the overall gain in jump length wasn't that great over the basic jump, I maxed at 40.1 metres.

The other thing I've noticed is that it's easier to climb slopes using carving skis over carving boards.

It would be cool if the devs could give a little summary of the relative performance of different gear, and maybe the differences need to be exacerbated a bit?

Hi, actually, the specs for the boards and the skis are the same. When we designed the game we didn't want to have any differences between them for more competitive high-scores.

As for making jumps, if you pull the skis outwards (i.e both stick on the controller) you will have longer air time. Same goes if you pull them inwards, shorter airtime.
As for the board you will have the same effect although the snowboarder does a pose instead.
