Yes, The quality, and production time. Each animal has a specific time when they will be able to produce animal products. I don't know the actual time for each animal, but according to neoseeker[www.neoseeker.com], a female ibex milk production takes 4 days with a base production of 1, so raising stats in base production through breeding to maximum allows the ibex to give milk everyday. The higher the stats, the quicker they produce, as well as the higher the stats, the better quality the product becomes, which gives you more contribution points, depending on what you decide to do with them.
I believe all animals have the same riding speed, but don't quote me on this, because I haven't obtained a horse or gotten that far in the game, but according to this previous post, it seems that all animals have the same riding speed. If you'd like to further your riding speed, there is an accessory called The Cheetah's Bracelet which can give you a boost in riding speed, but that's pretty much the most you can get out of riding speed. That accessory information can be found in their official wiki that I link below.
