Winter

i Plant lots of beets and i process them into juice then wine and vinegar ( i only use the 2 last good quality so the red triangle and golden cross or level 4 or 5 quality.
then i create marinade lettuce and the koh who are the best vegetable for the price also quality 4 and 5. I keep low quality for fermentation or food but you better use high quality of somethings you dont transform if you require lots of energy.
Spring

I continue planting beets for vinegar.
i plant tomatoes and i keep high quality for making spaguetti and quality 4 i make tomato juice who is very good for making food with octopus (( good food for fishing)).
i plant sesame i'll mix later with eggplant for make food also.
Potatoes are good marinate you can keep low quality as roots or carrot for foods. I use beans for making vegan meat very good for few plates. garlic good also for somes meal.
Summer

I plant wheat and i procede in flour for bread with high quality and quality 4 i ferment them so i make beer and i sold them.
strawberry good for gifts and for somes plates who require fruits.
eggplants very useful for easy meal mixed with sesame.
Pineapple its very very good for money. You can plants lots its long 18 days for grow but process into juice, wine and older whine high quality its easy around 600 contribution per bottle so if you have lots barrel you can make easy 20k per week who's very good for profit.
Tuff its very good you'll find them with horses when you unlock the horse totem. Its a good grain for flour too i mix them with tomatoes for spaguetti very good for mining (around 200 energy and mostly +8 or +10 mining if you make high quality.)
thre lots of good vegetable durring summer like buttermilk squash very good with vinegar. sweet potatoes too. sunflower good for oil mostly for food and also maybe gift with few peoples.
Fall

Pumkins its like pineapple very good for profit its 15 days growing but plant lots like pineapple and mixed with vinergar its lots of money.
squash again also with vinegar.
all grains like sarasin or amaranth very good for beer too or flour. sweet potatoes.
but think about others plants for foods its not bad to mostly split your crops to make profit but also foods for years stamina is your best friends in lots of situation but also bonus you can use. Oh and HONEY if you can put somes bee nest to cover your fields you,ll get lots of honey very good also for foods, gifts and hydromel.
And last tips plants trees for fruits mangoes very good for gifts but others fruits like pomegrenade make good toast for gift bonus and social skill. Lemon good for making food with octopus ((very good for fishing)). others fruits can be used as dryed fruits, milk tacos whatever....
Old cheese and herbal cheese or mushroom cheese not bad too so think also about animals if you can gets few high level animals very good for eggs, milks and others product you'll require. (( last level barn automatic collect product on animal)). so you just need to keep your animals happy and clean.
Dry fish not bad too for profit when you begin so if you dont plant lot cause you dont have irrigation you can mix fishing and few crops at the begin.
Its one of my favourite crops as of late game, I'm in my 3rd year and once winter hits I prioritise this crop as i can put it in the waterwheel and then on the cheese cloth and that it!
BOOM you have Oat cheese with the lowest grade (black dot) being at least 230 points. I have well over 20+ cheese cloth and it makes me well over 50K. Especially if I put them into a cask and upgrade them with mushroom (i prefer mushroom because i have a mushroom farm that is low cost compared to hardwood or herb. I use herb for my wine i find it more profitable that way) All this to say give oats a try you wont regret it especially if you have the waterwheel.

Oats Cheese (just plant a couple of thousand in Winter, make milk in the mill) - this will last you a year even if you fill one shed with cheese cloth. Don't bother to mushroom them. it takes 5 days to age them for a marginal profit increase.
Do this instead of making oat beer. Beer will block your brewers for wine and additionally you will need the same amount of fermenters just to keep it running.
You will require the same space and same time (cheese = 8h, beer = 4h) and make more "money" with cheese. Bronze Cheese = 308 / Bronze Beer = 231
One cheese cloth with 2 slots will make you 1.232 contribution a day if you have a steady supply of oats.
Do NOT bother with high value Vinegar. It does not add contribution at all, neither making the vinegar itself will raise the value, nor using high priced vinegar will change the pickle price. You will get the same amount of contribution if you use a wild honey mead or a Pineapple vinegar.
Selling good priced Beer/Wine/Mead is the way to go.
The only reason to use good vinegar is to get more "charges" for the pickler.
But do NOT use vinegar that's worth more than 150 contribution as this will already get you the maximum use of 5 times, sell it instead.
