Just place down the Beehive near Crops and wait a few Days, with every day, starting from the 2nd to 3rd you should see the beehive fill up more and more, and after 5-6 Days there should be an exclamation mark and you can harvest it :-)

oh okay thank you! i assumed the honey visibly spilling out was an indicator for it being harvestable

Beehives can be placed any where to harvest just near crops and you will get better quality honey fitting the crops they are near and also it will speed up there time in producing honey to harvest.
Keep in mind not all crops will work tho you have to have crops with flowers so carriots wont benafit the beehive at all for exsample.
Strawberries will and crops that blossom with flowers before there fruit or vegetable are the plants bee's will benafit from any thing else they don't but can still produce just takes longer and its basic wild honey.
