Does anyone know what Male Ibex produce? is it just the very occasional very long horn drop?

I believe yes. But other than that you need it for breeding so that you get higher quality items

You get the idea for breeding when your friendship with an animal hits the middle, it costs 50000 contribution though, so you will very likely get the idea way before you can actually do it.

Oh damn, I'm still way off then. I'm still fairly early and probably only made like ~500 contribution a day.

Still need to clean up the farm.
