Can I turn it off between bosses? Or will that reset the count?

don't see why it would reset it due to the language of the achievement

you could test it for us and for science, if you'd like :>

from a new game+, it should pop at the leaf guy in the autumn area

Don't worry. People confirmed already you can take it off between bosses.

@Flan Yes, you can turn it off. I did it and got the achievement. These are the 10 bosses I defeated :
