Disabling multiple selection by default
I'm used to deselecting everything when I click on a new vertex or click away. Instead it just acts like I'm holding shift in Blender and adds whatever I clicked into my selection. Is there a way of changing that?

If you go to Edit > Settings > Edit Mode.. There is the option "Deselect when clicked nothing"
That will deselect stuff when you click on empty space.
In the future I'll try to implement the option to deselect when selecting something new, but I need to figure out how that will affect keybindings for existing selection modes.
