As a newcomer to Halo, should I start the series with Infinite?

Definitely not, if you just want to play multiplayer then sure.
For the story, start from CE and end with 3

Infinite is such a fun game and you should really give it a chance before listening to the haters. I'm a Halo veteran and stand by it 100%. That said, I would recommend playing the games in order for the campaigns and then trying out infinite for the multiplayer.

Go play MCC campaigns first

Chronological order is Halo Reach Halo 1 Halo 2 Halo 3 ODST Halo 3 & Halo 4

or play order of release Halo CE Halo 2 Halo 3 Halo 3 ODST Halo Reach & Halo 4

skip Halo 5, just watch the cutscenes maybe or else youll have no idea whats going on

Play Halo infinite last because its basically Halo 6

It's good gameplay wise but I'd recommend MCC before infinite.

Infinite is like....eating ♥♥♥♥ after enjoying a nice gourmet meal. It's a fun game don't get me wrong- but 'losing connection to the game servers' is such a consistent disconnect that it's about as fun as getting your head stomped while you're mouthing a curb.

Just play MCC. Infinite has been trash for awhile and it's heartbreaking. :/
