They probably wanted to get a reveal out that had everything working , probably wasnt a concern to show completely finished design just yet. This is probably what playtesters are seeing.

You can't have your cake and eat it too, something had to give and in this case it was the graphics, modeling, texture work, lighting, art style and overall visuals. Those giant Minecraft pillars clouding the landscape aren't there to look pretty, they're there because it's cheap to store a bunch of those in the Xbox One's limited memory interface.
