Every sniper can 1 shot kill to the head and there's also the sweet spot which means you can 1 shot kill someone to the body based on certain distances, this site https://sym.gg/?game=bf1&page=charts (called Symthic) will show you what's the required distance for the sweet spot, which varies across the sniper rifles. Just don't rely on the sweet spot and always try to go for the head shot, which is the easiest to do with a 8x zoom scope.

In my opinion:

Close range 50m: Ross mkIII or Gewehr M.95 (marksman variant 4x zoom scope and you can stay in scope and just keep shooting, you don't have to zoom out for the next shot)

Medium range 50-100m: Russian 1895 or Lebel model 1886 (sniper variant 8x zoom scope)

Long range 100+m: Gewehr 98 or M1917 Enfield silenced (sniper variant 10x zoom scope)
