all in all you might be a little confused by things but i dont think its enough to ruin your experience if you play 7 first.
for someone who wants the rpg of 7 but also doesn't want to get lost that's saving them close to 80 hours avoiding the rest. and quite frankly 3 is pretty self contained as a "ex yakuza just wants to live a quiet life but can't" story. 4 and 5 also heavily reference the events of the previous games in such a way it feels as if it was designed for newcomers rather than to refresh the memory of a series veteran.
if they end up liking the kiryu games? great! there's enough incentive at that point to go to 0 and work their way up as if they were playing a prequel trilogy. the only wrong way i see is to start at 4 or 5 cause then there is so little known about the main characters that you would be confused as to why they are relevant.
Play all games (Dead Souls too), don't skip anything.
