Freespace 1 and 2
Project Freedom
Descent 1, 2, and 3
Wing Commander games
Homeworld 1 and 2
Various LucasArts titles--X-Wing, Tie Fighter, Tie Fighter vs. X Wing, Rebel Assault
Some various Star Trek games as well
Freespace 2 is pretty great. Project Freedom is OK. Depending on how far you want to stray from the genre, you can also look at Descent 1-3 (made by the same people that made Freespace), all of which I'd call planet-based space shooters. Homeworld 1 and 2 are more about strategy though than shoot 'em ups. You may or may not be able to find all of these various games these days.
Unfortunately, all those games above lack trading, so far as I'm aware. If you want something with more in the way of trade, exploration, and dialogue, one of my personal favorite games is Protostar: War on the Frontier. You can also look into the Star Control and Starflight series, but those are pretty old.
For newer games:
Star Citizen
Eve Online
Elite Dangerous
No Man's Sky
Outer Worlds
Add in the Mass Effect games if you're looking for space-based story and travel, though I don't think there's any space combat you can actually participate in.
Star Trek and Star Wars have also both had some more games in the last ten years or so, but I'm not sure what they are.
I regard DS1 as a more streamlined version of most space games
I-war (indepence war) 1&2 "edge of chaos"
x3 reunion
