I remember that the mage was REALLY powerful, has a lot of spells all very different from each other so you have one for every situation, and he can unleash a lot of dps too.
I don't really remember the other characters so well, but a friend of mine used to play with the dark elf and told me he has a very tactical combat style, so maybe that's the one for you?
I'd say just try all of them for a bit and then choose.
Battlamage has low physical stats and literally no physical abilities, his skills are oriented on magic spells, which makes his basic attacks miss a lot and inflict somewhat low damage.
The easiest classes in my opinion are Gladiator and Vampire.
Glad is just beefy dude who kills everything with weapon, so is vampire, but she's a girl and can also turn into a bloodthirsty beast which capable of ripping off a dragon in a few strikes when angry.
Both elves are not hard too since their attack is good, but they have low defence and thus require more control and precision to play.
Battlemage mostly rely on skills, rather than weapon, which makes early stage of the game somewhat challenging, you'll have to run and kite a lot.
Seraphim is similiar, but she can also be a decent weapon fighter.
And finally demon and dwarf - dont play them. Because Underworld add-on sucks

I'd say pick a melee character over a ranged character to start, as the ranged characters require a bit of kiting, but I personally avoid the Vampiress. She seems cool but almost the entire game takes place outdoors, so waiting for the sun to go down to get the most out of her can get really tedious really fast.
I personally like the Seraphim b/c she gets some really cool spells, including doing continuous damage to all undead in sight.
While it's been a while since I played, I don't remember there being any characters that were particularly easy or hard though.
Oh and about undead - they can be very annoying, but most of the time one or two anti-undead potions is enough to deal with them :>
