Missing Monsters in Journal?

I am missing a monster per biome of the Melkor Realm, how do I make these appear?
I've fully completed the Brothel storyline, maxed out the relationships with all the girls there, the two girls at home, all the shopkeepers, and have just reached the dragon cave in the main storyline. Finished the Halloween themed dungeon but not the Christmas one.

I'm sorry, I was being stupid. Going through the red portal at the end of the dungeon sends you back to the start but with more monsters prowling around, I just kept skipping floors and miraculously only ran into repeating ones (since Mimics now can be random encounters outside of chests).
