from my own hitting-the-wall- experience with this game
i uninstalled and played something more enjoyable
i wanted to like this game but the instead of playing the game you start to fight with its "features" and "design" choices on top of clunky combat
The crab is the most predictable of all enemies when it comes to parrying. Some attacks you should dodge and stay out of if not confident enough to parry but when he drops his claws 5 times in a row you should get your parries in there.
The monster spawns are the real difficulty as trying to manage a 3v1 is hard and i can't help much there other than to use your abilities to get rid of them as fast as possible.
"I switched to easy mode, but still can't beat it"
I guess you won't beat it but hey, you tried...
