Center area with the floating platforms, stood at every platform boarding point and I only ever see the two platforms with the North and East exits? Probably just missing something obvious, but where do you board a platform with South/West exits?

Hi, you have to "unlock" those floating platforms first. So, I don't remember for sure but, you should first go north (and cross into the other area) unlock the platform, and then go south (?) so you can finally go west (maybe is the other way around, but you get the idea).

The only thing I found to interact with in the north is the Ether Cannon. There's a blue platform at the furthest north point but it doesn't seem to do anything.

There are more floating islands you can"unlock" by breaking the chains that anchor them to the main land. They are not very clearly marked, but if you interact with the chain you will smash it with your sword and free up the islands to then circle the route with new Entry/Exit sides. Allowing you to progress thru the zone.
