Leveling monsters increases their stats without the need to use food to upgrade stats. There is debate among people who say that they do not notice a difference, but from my own experience, leveling monsters will increase their stats, but it may be much slower than using food to increase their stats.

But as for taking monsters to the dungeon for other reasons, it may be worth it just to make dungeon runs quicker for materials, if you need them for any reason.
Depends. It is EASIER to Raise Lamias and Centaurs for Plankton than to cultivate a Dragon for the same purpose. It is EASIER to have Harpies and Cats in the Mill, and it is EASIER to have Cyclops and Holstaurs for the Trade posts. Wolves, Dragons, and Chimera typically work best for Fields, and Wolves and Demons are the best for Training Yards (And easier to raise).
Are any of them better than Dragons? Eh, not really. But no breed is truly worse. If you want the "Ideal" Monster, Dragons are your main breed, but you don't need any monster to have more than 600 in any given stat for any job, and having 500 is usually fine. Wolves and cats are easier to get than Dragons, but Dragons aren't exactly rare either...
Not at this time. Maybe when the game has more content. The Savannah Dungeon is the only dungeon, and no other means of getting the shards exists. There is an exploit using the Essence market that is laughably easy to use that will get you the funds you need to buy those stones, however. Like...you can have all the stones you need in 2-3 weeks of just using the exploit, which only takes maybe 20 minutes for the full thing. Not as fun as grinding (Takes away the whole point of the game's grind tbh), but if you NEED to unlock the farm...

Not without going into the dungeon to interact with them. Otherwise, no completely, and the devs are unlikely to add this feature based on what they have said in the past about the time and resources needed to add graphical assets. But who knows?

I have kept a small herd of holstaurs and cats around just for the purposes you mentioned, and milk for bread but am aiming to have all dragons/chimeras in the fields.
After having crunched the math (for my own understanding of how the mechanics work presently), I can tell you that there is only one field available on the farm that needs more than 500 in any stat. Even that field (Which has 4 subdivisions) only needs a maximum of 600 in any given stat.
You can accomplish field coverage a number of ways:
-Have a Dragon (One Dragon) in all your fields with their stats maxed. You can do this either by feeding them the appropriate foods (This is the fastest method if you have the correct foods to feed the monsters. I recommend hand feeding them because that also counts toward improving their Loyalty and ensures that they get the right food you make) OR by using the Training yard to level the monsters (Assign a few Demons to this Yard, one training and one being trained, regardless of level, and when one of the demons maxes their Physique via leveling, put that one in charge of the yard and let it become your auto leveler) OR by manually leveling them by going to the Dungeon (May also be a fast option if you are doing dungeon runs for materials).
This option covers all your bases, especially since the monster also has universal essence.
-Have between 1-3 Chimera with the appropriate Stat array born in naturally, and max them as described above (The Stats you are looking for is Demon Physique, Cyclops Stamina, and Harpy Swiftness).
-Have a Dragon carefully bred to have the best stats (See the Chimera entry for the ones you are looking for).
-Have a Wolf carefully bred to have the best stats (See the Chimera entry for the ones you are looking for).
Obviously the Dragon is the best option on its face, but has a few downsides. One is that while the Dragon is working the field, you can't milk them for Essence/Byproducts or breed them for eggs.
The BEST Option, but not the easiest, is to have Wolves take care of your fields, because they have cheap *universal* Essence, their Byproducts are also not the best (Though I believe all byproducts sell the same IIRC, so this may be moot), and they are easy to get, and CERTAINLY easy to breed. Plus side is that they also have the possibility of having Friendly automatically, which is good for keeping them loyal.
But again, at the end of the day, the question is: Do you need money? If you are using the Essence Market Exploit, you don't need money. Ever. I keep advocating they find a way to nerf it because it takes away the fun of the game IMO.
If you are not concerned with money, by all means, use Dragons in your fields. If you want to grind cash the old fashioned way, use Dragons in your fields until you get a good Wolf Breed, then breed up a pack of these uber wolves, give them straw hats, max their super stat arrays, and put one in each field.
Then focus your efforts on using Dragons for what they are really good for: Essence, Byproducts, and Eggs.
Oh, also combat. They are good for combat too. The best, in fact (Their maximum stat array with perfect breeding strategies is like 1450 in all stats, and their abilities aren't bad either).
