Should i play the DLCs before or after the main story?
I'm currently at Skyhold, and i have to start the Empress Celene mission, but i've been cleaning all the maps from objectives and quests and i'm level 21, so i was wondering if i should play the DLCs first or after.

I’d suggest finishing the main story. Trespasser 100% needs to be started after you’re definitely done with everything else. The descent I think is fine to be started whenever, same with the avaar one, but I found they’re higher leveled areas for when you can’t level up as much with the base game. Just make sure to check if you hit the level requirements for each of those dlc areas and you can go ahead and start them whenever you please

In addition to them being higher level as mentioned above, it also makes more sense for the Inquisitor to bother with them after the Main quest is completed.

Trespasser is a point of no return. If you activate it you only have access to its content. Its like the " epilogue" of the game in a sense.

Warning if you do them after main quest ( small companion spoiler without a name ) : one companion is no longer available after the main quest. So if you do them afterwards you obviously will not have said companion available

How do i start Trespasser? Just to be sure i'm not gonna make that mistake.
Also, do you mind telling me if it's any between Dorian, Varric or Cassandra? They are my main team!

Trespasser unlocks after you finish the main game, you can start it through the war table (the game gives a big warning that you wont return back if you start it ) .

Also pretty sure some the dlcs have some level set changes when 1st unlocked.

Vaguely remember doing the war table to unlock the underground, but not doing it until much later then read online shouldn't have done that as it sets the level to its lowest capable (though no bigs if care about such things since can use the extra challenges thing TRials or w/e it called)

Most popular choice seems to be doing all the dlcs after completing main story. I have also done same. With even ground trials on (at least same level enemies).

But I like to do bit of JoH from mid level (14-17). Just setting up camps and clearing the rifts. Pretty easy way to level up quickly. And I don't use mod but used in-game exploit/bug for re-spawning loot. Leaving 1 item in rifts and getting tons of level 4 metal, and pretty good fade touched materials. One rift in the middle of the map / river gives fade touched pull of the abyss which is my fav for tanks.
