I got to do something since I spend half my time hunting my mouse. It is somewhere in 96 inches of monitor space. I completed the tutorial but I have the setting on easy and I probably need it since I spend so much time wondering where my mouse is.
Controls are pretty similar to most other RPG/MMORPG's. In FPS and action RPG's your aimpoint moves with your mouse. But here its a combination of WASDQE and mouse inputs to move your character and look around. It means you can move in one direction while panning the camera around and looking in another direction.
As far as your cursor issue goes, not sure if you saw it but there is an option to make your cursor bigger. Escape > Options > Display and then at the bottom Mouse Cursor Size. Dont know if that helps or not, but maybe give it a try.
If you move to windowed then back to full screen, it will lock the mouse pointer into your window. You can do this using alt + enter to toggle fullscreen on and off. This still allows you to alt-tab to other windows but will keep the pointer in the game window while playing.
You can hit Escape then go to the Codex > Tutorials to read what it was trying to tell you. Myself, I don't use Tactical Mode too often because it screws with the camera too much but basically, hit T and you will enter tactical mode, where you can give each party member a target and a command to carry out next. You can also do this in pause, using the control key. Tactical mode though also lets you inspect the enemy for weaknesses and whatnot so can be helpful from time to time.
I also noticed that you can enter Tactical Mode with a mouse wheel by scrolling out twice. First notch pulls the camera back, second one enters tactical mode.
I noticed that in the hair colour selectors, there is one for white hair with white eyebrows and another for white hair with dark eyebrows, so you likely picked the latter not realizing that it was affecting eyebrows too.
After you get into the game and can find The Black Emporium, you can go there and use a mirror to change appearance free of charge.
You can also adjust it in settings so that you cannot enter tactical view with the mouse scroll but only by typing T, and I have done this because I got tired of accidentally going into tactical view when I was just backing the camera away to get a better view.
So far I only use tactical view rarely, but I find it most helpful when I want one or more of my companions to relocate away from where they are standing in a battle. In tactical view (while paused) I can give them a command to move to a marked location and then I exit tactical view, exit the pause, and continue the fight.
On some computer systems it is a different key combo - alt + enter is the default, though not every manufacturer sticks with it.
You can also just go into settings, deselect full screen, apply, re-select it, then apply. (Though it might be easier to figure out the key sequence on your particular rig.)
There is a key bind for lock and unlock your mouse/cursor from tactical camera, camera (where you need to have camera looking at target direction to target) and free cursor targeting. All three mode is possible to use this key bind to toggle between cursors free over surface or to look it so you will control camera and fight/target. When you are in looked state/mode you will not see any cursor and camera will turn instead as in this mode cursor are now controlling camera. This is important as there are some dialogues where you need to toggle to be able give an answer (there is no number to use instead to pick an option in replay).
You have to look into keybinds and set up a key as this is one that don't have a default key from start (and therefore you will not see any tutorial or mention in UI about this feature).
As for multi display I can not answer that, but have you used Flawless Ultrawide? This app need to run in background before you start Dragon Age Inquisition to do its work. I use it as my 3440 x 1440 pixel screen as it have problem to show cut scenes in proper aspect ration (stretched out).

This game also use Fullscreen, Borderless and Windows Borderless mode which can be toggle by ALT+TAB (yes it does change focus to desktop and make game window smaller; if you set in game resolution to 1920 x 1080 pixel which can help to see behaviour UI in full and not cropped on left side). ALT+ENTER do change among which mode you will use.
Don't forget that MS also have made a large amount of changes in how Windows 10 (build version 2004) behave as for desktop and gaming. Not everything can be blamed on BioWare or their team for how DAI work today (it was published in 2014).
