Anyway to make 1 sim immortal?

Yes. Use MC Flags directly on that one sim.

In game, you can get a spell caster's immortal potion. They can still die, but not of old age.
You can also wear that jewlery with the "can't die" gem, I think it was a uncommon one, hemitte? The little back gem not the big black gem (Jet). Big black gem (Jet) summons death and death hears your pleas to spare a life. Little black gem and your sim can't die while it's charged.
You can become a vampire, and not age or die of old age. You can still die, tho.
The Little Ms Sam mod to change that to true immortal; Can't die and doesn't age.
You can do similar with the Trippilis sorcererr mod.

Werewolves have a perk trait that makes them true immortals, but other than that as Xenon says, there's jewelry you can craft that stops death while its charged and worn and casters can make immortality potions that stops death by old age. But otherwise, use MCCC to flag a sim for immortality if you don't have any DLCs or just want the quick and painless option

my Sim, Flavia Flav, died tragically, suddenly. i figured out you can bring them back in Create a Sim, but i changed her name to Flavia Flav2, out of respect.
she couldn't afford to move into her old house yet, but i got that sorted. hope i didn't get her involved with a loan shark!

Spell casters can bring each other back pretty easily. Then there is the whole "Life and Death" DLC where you play as a ghost. With L&D, you can play a dead sim. With Magic Kingdom, you can take a immortality potion and simply bring your sim back to life.

No need for mods or dlc for this option:
In world map theres like options to manage households, add them to my households then turn off accidental death in neighbourhood stories. After that you go to settings and one of the tabs is related to sims lifespawn, u can turn aging for inactive played households off. now select the sims households u want to stay as they are, play for 3 seconds so they're actually marked as played household and voila, u fav friends are immortal while ur playing the main household.

1. Click the sim, bring up MCCC.
2. a. Scroll down and click "Sim Flags" (only that sim in the household is affected).
b. Click "Flag Active Sims" (all sims in the household are affected).
3. Either case, click "MC Command Center".
4. Click "Flag as Immortal".

If you are tired of having an ageless sim:

1. Click the sim, bring up MCCC.
2. a. Click "Sim Flags".
b. Click "Flag Active Sims".
3. Either case, scroll down to "Clear Flags".
4. Click "Flag as Immortal" and the immortality will end.
(This can also work for other flagged things)
