Proper controls and a bit of experience helps.

That isn't saying much, but casually for me It isn't that difficult.

What controls do you use? Im stuck in his second mission, I can't make the plane go up using keyboard and using mouse just makes it to go insane

You just need to fly the RC plane just like flying a regular plane, using down key to ascend,up key to descend, you just get close to Berkley's delivery vehicles and hold CTRL/LMB and they blow up easily. Q and E turns the rudder to left and right, respectively. Helicopter controls apply to RC Goblin,in that mission you should pick up bombs and destroy the RC tanks before proceeding. Don't remove the obstacles in front of Zero's car until you take out all of the tanks, you can also drop the bomb on Berkley's RC goblin and prevent it from dropping the obstacles. You don't need to be too precise when dropping the bridges to gaps too, they will fit their place even if you roughly drop them on the river. If you don't want to deal with these missions and move on with the main story, you can go ahead, you can still complete the main storyline without doing them but you need to do these for 100% completion.

100% plane & helicopter controls transferring but you have to get a bit of experience to understand how the vehicles all handle.

Flying and/or driving with mouse is never recommended, unless that's your forte. I believe that's just the game trying to emulate a controller function and is pretty wonky.

As most people already know, it's required for 100% completion of the game.

I honestly don't think they're as bad as trying to get gold medals on some of the driving school tasks like; Alley Oop, the '90' and Wheelie Weave (even for complete beginners).

Driving school tasks in particular are wonky because 90% of players don't realize that the game basically suffers when your FPS is high, thus requiring you to enable the frame limiter to effectively pass missions.

Don't know where I'm going with this tangent but TLDR; I personally think driving school gold requirements can be harder than Zeros' missions.

Woo 100% completion...what a goal.

That is for people with compulsive disorders.

Agreed. Zero missions are the 2nd most boring in this game. Freight is obviously the worst, the one where you have to drive the train all the way around the map for no apparent reason. Overall it's still a great game.
