Joy 8
I play the game with an Xbox 360 controller and every time instructions about something pop up on the screen I don't know what to do because it says joy *number*. So, can anybody translate the joy numbers to the actual controller?

You can translate them yourself in the control options or downgrade your game and download GInput.
This is probably because the smart genuises at Rockstar Games thought that people would play gta san andreas with the same joysticks used to play flight simulators.

The game was released before the Xbox 360 & PS3. Xbox & PS2 controllers couldn't connect to PC due to not using the USB interface so the icons for them are disabled. The only controllers that could connect to PC at the time used buttons such as 'JOY8' or similar. This is the reason why the button prompts are 'JOY8' rather than the usual Xbox & PlayStation ones. Rockstar could have updated the game to officially support the Xbox & PS controllers and enable their button prompts but they would rather remove the songs and make the game a mess from the original.

GInput[www.gtagarage.com]by SilentPL enables full controller support with auto-aim, proper button prompts, rumble support and even the ability to play co-op if you install a mod to bring the co-op feature from PS2 & Xbox.
