I have had it happen, but only once or twice, which is more than enough.
Found what was causing the issue, by turning off steam cloud, it removed the stuttering issue when gliding. ~ hope this helps anyone with the same issue in the future ~
Add the
\\Steam\userdata\USER_ID\...
directory to the exception folder for your Virus and threat protection.
In the windows search bar : Search
-> Virus and Threat Protection
-> Manage Settings (under Virus and Threat protection settings)
-> Add or remove exclusions (under Controlled folder access)
-> Add your steam install directory : \\Steam\userdata\USER_ID\ (Big number)
Note: you can go more precisely with \\Steam\userdata\USER_ID\75177138\... which is the Enshrouded game Id.
It keeps the Microsoft antimalware from constantly checking the cloud saves of the character while playing.

As some other threads pointed out, I had my steam on a HDD and the game on a SSD. Moving my steam to the SSD solved the issue.
