Parrying is blocking right at their attack, with some enemies like the dual green dagger bandits you must train a bit, since he attacks non stop its risky but after awhile you memorize his moves.
If you are gonna parry get the skill to fill their stun meter faster, merciless strike is good but you have to know its slow, too slow imo, so since it usually one shots enemies it can be interrupted, although i think im only having trouble with it because my world setup is for all enemies to attack at once.
