I do approach from the back but these are really sensitive now. It's infuriating.
I hope so because this level is insanely frustrating. Get a heart then it goes away... The animal turns and comes right at you and you can't back off... I had a cat in a corner area and tossed a few bait into the corner and waited (so it'd go after them 1 at a time) I still couldn't get all 3 hearts done.
And yes it is HORRIBLE for any foods needing meat or milk or anything you cant grow. Growing plants if SO eazy, but not getting meat, ie wolf meat for cats (rarely drops).
I see wolf meat drop all the time around the starting area. There is roaming packs of 5-6 wolves all over. I have the cat and just got the dog the cats bowl has had food in it over many sessions from just one batch I made. The only thing I had issues with for finding the food was the stinging nettles,but once I did I can hold one back to use in the planter which gives me another 25 plants to harvest.
Here's some quick tips:
1) Oddly enough, bows are your friend. Before you start taming something, you should spook them into going someplace more open, and also make them face you from afar. I haven't tried spooking the cats out of the alchemist's tower but I assume it's doable.
2) Faster sneaking. Some wild animals just can't be tamed without a speed boost. It's a sad fact. Wearing leather pants will help with this, but Rangers and Assassins can easily afford the 3 skill points for an extra +40% sneak speed boost. Even if you're some other class, consider resetting your skill tree for the express purpose of a taming trip. Once you're done, you put the pants away and reset your skill tree again.
3) As you approach the wild animal that you've spooked into position, drop a long line of bait. The line should be as long as your double jump can let you glide. If you can't do a double jump, then do double your gliding distance. This is crucial for tip #4.
4) When you pet the wild animal, pet them from behind. They like to wander away from you, so make them wander over your long line of bait.
Done right, your setup should look like this:
X * * * * * * * * * * * * * * * Y Z - - - - - - - C
X is where you started, * is bait, Y is the animal, Z is you petting them to push them into your bait line, the -'s is the empty space you'll need to escape to, and C is where you shot an arrow (as per tip #1) to spook the animal into standing at Y.
(There's a reason the devs let you craft so much bait; you're supposed to waste it on the floor.)
With practice, the setup and taming shouldn't take more than 3 minutes per animal.
The cats are an exception, as the setup will take longer.

So that it would be possible to build 2 bets and there would be NPC doubles for crafting there...
Unfortunately, there seems to be some issue with the don't lose progress setting. When I had the default, the "pet" sequence did get a single red heart. But with don't lose progress the setting appears to be interpreted in my game as "make no progress". I'm holding the "pet" key and it does not appear to be taking effect no matter how long I hold it.

I'll revert the setting and see if there is a correlation and if so, report it on the support sub-forum.
