I've seen videos of people floating so they can build roofs and stuff. How do they do this?

Are you sure those people were playing Enshrouded, and not another survival crafting game like Valheim? AFAIK, there are no cheats or console commands (yet) to enable such things.

There is a mod called "Builder's Companion" on Nexusmods that does what you want and more.
