Doesn't really help if you want something different because you're bored with melee though.
Maybe I can try to shed some light into this ;-)
build: in this context it means the combination of skills on the skilltree and equipment (weapons and armor) that make the build of your charakter in the game. It determines if you are a fighter, a hunter or a wizard and how strong you are.
OP = "over powered", i.e. too strong for your enemies to be any challenge. Beeing OP or having OP skills or equipment makes the game very easy, but also very boring. Usually people try to avoid this.
But careful: OP can also have a different meaning and stand for "original poster", i.e. the person who started a froum thread by making the first post. You can only tell this from the context. Here, in this thread, the OP is asking about OP builds
sword and board: I can only guess that it means "sword and shield". After all, the first shield you get looks more like a board, roughly hammered together. But I am not sure about this one.
Wear the best armor you can and maximize DPS in combat. The more damage you do, the more you heal in combat, which becomes very OP later in the game (and even early/mid game).
The barbarian branch has some very powerful skill perks for melee, such as Breach and blood rage, which you can get pretty early if you concentrate on the skill line. That fits my play style in any case.
And the explanation of 'build' makes perfect sense!
The combat is not hard, you will only have trouble in the hollowed halls and even there you can perch somewhere and blast away, use grenades and so on, game lets you get away with a lot of things, give you a lot of freedom in a fight, even the dragon can be cheesed.
You will die more of falling inside some red fog than combat imo.
