I could kill them faster and get less hit when I stayed close to them, dodge into the attack, run / roll / jump almost under them and shot. When you're close their attacks miss very often.
Another way is to simply get super close to them. The two projectiles they shoot curve outwards, then inwards. If you're close enough, and I mean close close, they will curve around behind you. But early game, that's crazy risky, when those projectiles can nuke your health.
Same up close tactic will work for the fell sicklescythes later on. But the sicklescythes have another attack that shoots a huge projectile ghost skull straight forward, with a AOE blast. So 20 times riskier. For those guys, I hide behind things.
Also helps to lure them into a tight space so their homing attacks have a harder time circling back after a dodge.
