what does the 2 different colors mean?

Unsure what these mean as well -- I have just assumed that yellow is passive mobs and purple seems to only come up during time in the shroud, so enshrouded mobs? IDK

they have a number next to it, wich i assume is there level, and it seems there only purple when there a highter level then you

I think the purple means that your opponent is higher level than you :)

Purple appears when the enemy's a higher level than you. Red appears when the enemy's lower or same level as you. Yellow on a red or purple bar shows the damage you dealt to them.

I think one may be their armor/shield. Once that one is gone, the other goes quick

Not quite--I have encountered large walking mushrooms that have yellow health bars (without me ever attacking). I suspect they are yellow because they either are passive unless attacked or because they deal poison damage.
