i have since turned off my PC and gone to bed, and reloaded the game just fine.

right now i'm assuming you can't do that unless you have done the quest that first introduces you do that block so you can craft it, e.g that one where you search the mine rift for the castle block.
Is polished a different thing? that could be what i'm missing.

I went through this list and gathered all the different types of stone block i was missing and none of them match.

Glanced over that on the list cause the menu icon for it is so much darker that the actual tile and it looks nothing like the tile either. plus it's just called "block" not brick.
