Explain the death system to me...
What do I lose and what do I keep? Can I turn off losing items in the settings somewhere?

you lose crafting items and no can not be turn off (yet)

i hope they add a button to disable droped items. palworld did that, so i hope this dose.
at least for sp anyway or private worlds

As other said you only lose resources. You don´t lose your gear.

You will lose lockpicks though, even when in the bar
