Fixing existing structures
How are you guys going about fixing already built homes you find in the world?

I found harvest homestead and made my main base there. Its beautiful and it has all I need, however, when trying to replace some damaged roofing, i just created a mess since removing the damaged pieces doesnt work and simply putting another messes the entire thing up.

Im thinking that fixing the ruined walls and the flooring with the overgrown grass and such will be aswell?

If you use the hammer's "1M" building category, you can manually recycle pre-existing constructions. The "2x2 Wall Blocks" shape works reasonably well, despite being a bit tedious if you want to update and/or integrate existing buildings. Possibly a couple weeks late, but your question came up immediately before I found another thread with the answer. I hope it helps.

Does anyone know how to remove the flora (vine/ivy) covering decayed constructions, without having to destruct the block behind it?

It's part of a block, so no as far as I can tell. It's not always obvious which block it's part of, and surrounding blocks also affect whether ivy appears. I still haven't figured out exactly how it works, but there are variations of the same block that come up, and if you remove and replace a certain block, you'll get different results.
