I stopped at building a ceiling over the first floor. The roof is only for cosmetics. I was level 2 when I started it, and I was level 2 when I got the ceiling over the first floor.
If you want the nicer-looking stuff, you'll have ton invest more time since, e.g., for a simple straw roof, you'll only need fiber, but for the nice shingle roof, you'll need wood and tar (iirc) to craft the building blocks. For the plain, gravel-looking stone floor, you'll need just rocks. For the kinda nicer-looking "mushroom" floor, you'll need rocks and mycel (iirc). Basically, it'll be as grindy as you make it. :)
